What advice would you give to a customer looking to hire a company like yours?

Every day you wait to start on SEO is a day you have missed out on the benefits of being on the first page of the search engines for your relevant search terms. You are giving business to your competition that could be yours. Before you hire and SEO company make sure that they show you actual results and not just tell you they get results. They should be able to show you results until you are bored of seeing them and show you how they got those results and the proof that they did it. Make sure that any optimization work being done for you is done by someone you have direct contact with. If they are not the one doing the work ask to speak to that person.
